Equal parts cottage cheese, egg whites and oats (I usually use 1/3 cup each, but 1/2 cup if hungry or 1/4 cup if not so!) 1/2 tsp cinnamon A few drops of vanilla essence (banana and coconut also work well) 1 pack stevia.
Mix all in a bowl with a stick mixer until fluffy. Fry over medium heat in a bit of your preferred oil. Makes 3 good sized pancakes. I top mine with banana, greek yoghurt, walnuts and maple syrup :-)
