Buckwheat crepe for one!
Recipe:
1/3 cup buckwheat flour
½ cup almond milk
½ tbsp tapioca starch
½ tsp cinnamon
½ tsp nutmeg
½ - 1 tsp stevia (or sweetner of choice)
Put buckwheat into a bowl & mix with tapioca, spices and sweetener.
Wisk in milk slowly unitl until it becomes a crepe like consistency. You may need a little more / less depending on where you are and the temp of your kitchen.
Oil pan with spray or coconut oil.
Pour crepe in until it covers most of the pan.
You could get small crepes out of this, but one big one will do me just fine!
