Brown rice salad with yoghurt sauce
Brown rice salad with yoghurt sauce.
1 cup brown rice & 2 cups water
1 red capsicum, chopped
2 cups broccoli, chopped
1 cup beans, tailed
1 big tomato, chopped or handful cherry tomatoes
Small handful of Parsley & dill (or whatever you have)
1 tbsp lemon juice
Cook up brown rice in a pot. Boil and then simmer for 40 - 45 mins until rice is cooked.
Cook broccoli and beans for a few minutes in a pot of boiling water until just softening.
Throw the capsicum and tomato into a frypan with a little oil and cook until soft.
Put rice, broccoli and beans in the frypan in and fold through.
Season with salt, pepper and lemon juice. Add in herbs.
You can heat the salad or serve it cold.
Yoghurt sauce.
1/2 cup greek yoghurt (I use Chobani 2%)
1/4 cucumber
1 clove garlic
Lemon rind and 1 - 3 tbsp lemon juice
Chop the cucumber and garlic finely.
Mix with greek yoghurt and add in lemon juice and rind to desired taste.
Serve on top of salad.
