Hot Cross Buns (Gluten free)
My heart skips a beat when I see hot cross buns in the supermarket. They are the one thing that I miss SO much being gluten free. Yes, you can get gluten free ones, but they're not the same and they're usually loaded full of sugar and nasties that I don't really want to be feeding my body!
So, what to do? I've made gluten free HCB's before and they weren't very good. I have tried numerous times actually, without success. I then found this recipe for Hot Cross Buns over on Teresa Cutter's website, and I love them :-) They are quite dense, and yes the have egg in them, but I figure, one egg over 6 buns won't be that bad for my tummy! I have changed a few things, but nothing major.

1 & 1/2 cups almond meal
1/4 tsp baking soda
1/4 tsp lemon juice
2 tbsp olive oil
1 tbsp maple syrup
Zest from 1/2 orange
Zest from 1/2 lemon (or to your taste)
1 egg
1/2 tsp cinnamon & 1/2 tsp nutmeg
1/2 tsp vanilla essence
2 tbsp dried fruit (or more if you like)
Pinch sea salt
Piping:
1 tbsp plain gluten free flour
1 & 1/2 tbsp almond milk
Preheat oven to 160
Mix all ingredients in a bowl
Form into 6 small balls (I made mine about a tbsp each)
Pipe a cross onto each bun
To make them even sweeter, brush with maple syrup before baking.
You could also use egg or milk.
Bake for around 30 mins until golden.
Devour with your favourite toppings!!

Mmmmmm buns before they went into the oven!
Verdict: Boyfriend - Enjoyed them.
Taste really good even though they're dense.
It doesn't have to be Easter time for Hot Cross Buns and I will be enjoying these all through the year!!
