Pina Colada overnight oats
I have been back in the kitchen, making and baking and have been LOVING overnight oats. I have been able to tolerate oats so I have been going nuts on them! This recipe is one of my faves, tastes like lemon cheesecake. The base of my overnight oats is always the same, I just switch up the other ingredients. The variations on this are endless, this is just one.
Base:
1/3 cup oats
1/3 cup plain greek yoghurt
1/3 cup milk (whatever you like, I used coco quench - kind of like a coconut milk / water)
1 tbs chia seeds
1/4 banana mashed or cut up
1 pack sweetner
1/2 tsp coconut essence
1/2 tsp lime juice & lime zest
1/2 tsp lemon juice & lemon zest
Mix all in a mug, throw it in the fridge, slam the door shut and wait eagerly for your pina colada breakfast! It was so delicious - Adam has claimed this the best overnight oats I have made, which is a good sign! I also throw in 1/2 scoop of vanilla protein powder and some extra milk, but not necessary if you don't want to.
