Coconut & lime sago pudding
Coconut & Lime Sago Pudding (4 serves)
1 cup sago / tapioca pearls
2/3 cup coconut cream
1 tbsp stevia
Zest of 1 lime (Can add in a squeeze of juice too)
Topping suggestions:
Pineapple / mango / lychee or other tropical fruits
Chopped roasted peanuts
Mint
Coconut cream
Boil a large saucepan of water (make sure it is large otherwise the sago pearls stick together). When water is boiling, add in the sago.
Turn down the heat and simmer for 10 minutes.
After the 10 minutes, turn off the heat and cover the pan and let sit for 10 mins.
The sago will finish cooking here.
Rinse in a sieve under cold water.
Put back into pot and mix through the coconut cream, stevia, lime zest & juice (if using).
Place into 4 serving glasses and refrigerate.
Before serving, add chopped fruits, peanuts, lime and some more coconut cream on top.
