Tuna, Quinoa & Tahini patties
Here is the recipe for my Tuna & Tahini patties that I make for meal prep. I just threw things into a bowl and hoped it worked. It did and its yummy.
They last the week, not sure about freezing, but ingredients are usually at hand and they take about 5 minutes to make, I wouldn't bother freezing them.
Tuna, quinoa & Tahini patties
1 large tin tuna (425g I think it its)
1/2 cup quinoa flakes (you could also use cooked quinoa)
2 tbsp tahini
2 tbsp soy sauce
1 grated carrot
Spring onions & coriander (a small handful)
Sesame seeds & chilli flakes for rolling
Mix all together in a bowl and roll in sesame seeds & chilli flakes.
Fry in a non-stick pan with some olive oil spray.
Makes 8 patties - I have 2 a day as a snack with a salad.
