Winter warming Quinoa breakfast bake
Mmmmm warm breakfast bake! Such a delicious breakfast for the cold mornings coming up. This takes no time at all to put together and by the time your coffee is ready it should be done baking in the oven. This recipe is gluten & dairy free. You could use normal milk if you wish or oats if you're not overly sensitive.

Recipe
1/3 cup quinoa flakes
1/3 cup almond milk
½ banana mashed or chopped, or a mixture!
Handful of raspberries or blueberries
½ tsp vanilla
Cinnamon to your liking
Topping:
10 crushed almonds
Pinch of shredded coconut
Goji berries & cranberries to top.
Heat oven to 170 degrees.
Mash banana in a bowl and then mix in the rest of the ingredients. Pour into a ramekin.
Top with crushed almonds or nuts of choice and some coconut.
Bake for around 12 – 15 mins until brown
Top with a little more coconut and some dried fruits of choice (I used goji & a few unsweetened cranberries).
I also topped mine with some yoghurt. Such a good balance between hot and cold. YUM!!
