3 weeks ago I made the decision to adopt a high fat / lower carb diet in order to regulate my hormones, hopefully upping my oestrogen and lowering my testosterone levels. I also am hoping for it to have some positive effects on my PCOS, my god fat / bad fat ratio and my liver function. The first 2 days were awesome, I ate as much peanut butter, coconut cream and bacon as my heart desired! Day 3 I crashed big time and reached for the chocolate…. It made me feel better, but definitely not what I needed! Some fruit probably would have done the trick!After that mini setback, I felt ok. I added in a few grains at breakfast and kept it pretty much grain free for the majority of the days, opting to get my carbs from vegetables and fruits. I ate bigger breakfasts and lunches, leaving me not overly hungry at dinner (not too fussed here).
I crashed one day last week, but it was ok. I knew exactly what to do. I came home, ate a banana and felt 100%. It was an amazing feeling being so in tune with my body and what I needed to do to get out of the slump I was in. Usually, I would have just shoved food in and hoped that I would feel better, but I actually KNEW what my body needed. I haven't felt that way in a long time and it was nice!
I honestly feel better than I have in ages. I don’t know if it is down to changing up my diet, or just the fact that I am eating a bit more (have put on a little weight but that’s ok!), but I feel good. I feel my strength returning at the gym and am super excited! I aim to eat this way until the end of the year, when I will then have my blood work done again, hopefully seeing positive changes! If not, I do think I will continue to eat this way. I don’t mind minimal grains, I have just opted for other options. In saying that, I ate a piece of bread today with butter and peanut butter and loved it. I was craving it, so I had it. Listening to my body and what it wants! :-)
My breakfasts have changed dramatically too. I usually eat a big bowl of quinoa flakes with fruit and some protein, but since dropping the carbs I was a bit lost as to what to eat other than eggs and meat. So I revamped my usual granola recipe, which I used to make with quinoa or buckwheat and just Paleo-fied it and made it grain free! It makes well with oats or quinoa flakes too, so these can be added in if you wish (just add in extra oil & maple syrup to coat). It is super filling, so I usually eat about 1/4 - 1/2 a cup for breakfast with a decent amount of Jalna yoghurt and fruit. It’s not a chunky granola, it’s more of a toasted one. If you wanted it to stick together more, I would add more maple or some honey.

Crunchy Paleo Granola
2 cups almonds
1 cup hazelnuts
1 cup walnuts
1 cup seeds (I used pumpkin & Pepita)
½ cup coconut flakes
¼ cup coconut oil
2 tbsp maple syrup
1 tsp vanilla essence
1 tsp cinnamon
1 orange, zested
½ cup mixed fruit
Put nuts in a blender and pulse until chopped.
Mix in seeds, coconut, cinnamon and orange zest.
Melt coconut oil, vanilla, maple in microwave and pour over nut mix.
Mix together so that everything is covered with the oil mix.
Bake in oven at 120 for around an hour (so the coconut doesn’t burn).
If you want it to cook faster, you can bake at 150 for about 30 minutes and add the coconut 5 – 10 minutes before ready.
Let dry on the oven and mix in fruit when cold.
Serve with your fave fruit & some almond milk :-D
