Sundays are meal prep time for me! I prep my snacks and lunches for the week. I usually don't worry about breakfast as I am happy with quinoa porridge every morning, and I have time to whip that up as I need it.
This week I have prepped:
- Coconut flour muffins
- Tuna & Tahini patties
- My Quinoa, carrot & coconut salad (click for recipe)
- Ginger & chilli chicken pieces
- Green beans
This should see me through the week! I prep for myself, I try to make extra dinner at night so that Adam can take it for lunch. I have found that he is not a fan of prepped meals when he is still eating them 4 days later! I on the other hand, love consistency, the fact that it's all done and ready to go.
Here is the recipe for the Tuna & Tahini patties. I just threw things into a bowl and hoped it worked. It did and its yummy. They last the week, not sure about freezing, but ingredients are usually at hand and they take about 5 minutes to make, I wouldnt bother freezing them.
Tuna, quinoa & Tahini patties
1 large tin tuna (425g I think it its)
1/2 cup quinoa flakes (you could also use cooked quinoa)
2 tbsp tahini
2 tbsp soy sauce
1 grated carrot
Spring onions & coriander (a small handful)
Sesame seeds & chilli flakes for rolling
Mix all together in a bowl and roll in sesame seeds & chilli flakes.
Fry in a non-stick pan with some olive oil spray.
Makes 8 patties - I have 2 a day as a snack with a salad.
