2 weeks to go and I'm starting to freak out. From being so highly organised, I'm now not sure I'm ready! The bikini I ordered so far in advance is now way too big so had to sell it. This leaves me with no bikini and only 2 weeks until comp day! I have ordered one and it is being sent but I would love it to be here right now!! The lady who was doing my makeup also cancelled so that was another thing to be organised! First world problems I know, but still stressful!!
I had a meltdown Thursday night. I absolutely hit a wall. I felt like I couldn't go on, lay my head on the kitchen table and cried. I didn't even know why I was crying. I wasn't tired or hungry or craving anything. I just felt horrible. I have never experienced anything like it - I was dragging my feet everywhere, I couldn't function and I just wanted to give up. I went to gym Friday morning and again came home and cried and knew something wasn't right. I shouldn't be feeling this way. Adam gave me a bit of a pep talk which cheered me up somewhat, but I still felt like crap. That night my trainer told me to go out and eat carbs, and a lot of them. I couldn't get out of that gym and to my local Thai restaurant fast enough. Carbs came in the form of coconut rice (A HUGE AMOUNT!!), pad thai and ice cream. My stomach was like a bottomless pit. I could have kept going but there was no more food! Adam walked away feeling sick, I on the other hand, ate just as much and felt refreshed. Ready to start a new day! Felt bloated the next day but by today was back to the weight I was before it and feel ready to go again. Can do this again Friday night and am already planning what I should eat. Paella? Risotto? Pasta? Pizza? Vietnamese? The choices are endless! It's funny, when you don't eat it you're fine, but as soon as you get a taste, BAM you want all of it!

Mini berry cheesecakes (makes 2).
Cheesecake crust:
60gms mashed banana (around 1/3 banana)
2 tbsp greek yoghurt (I use chobani)
2 tbsp cottage cheese
2 tbsp coconut flour
Mix all ingredients together until a soft dough forms.
Roll into dough and press into a flat circle with edges turned up.
I used 2 small rammekins, lined with baking paper. You could also use lined muffin tins.
Bake crust for 20 mins @ 200 C.
Filling:
4 tbsp light Philadelphia cheese
4 tbsp cottage cheese
1 tbsp lemon juice
1 satchet stevia
2 tbsp blueberries
Mix all together and fill the filling (once it is cooked). I use a stick mixer to get all the lumps out of the cottage cheese.
Bake for around 20mins at 200. I have found cooking time to vary dramatically depending on what brands I use - anywhere from 20 - 45 mins so just check.
Eat warm or chuck in fridge overnight for a cold cheesecake.
