What an awful two weeks health wise I have had. Last week I suffered from a permanent headache. I thought I had hurt myself at gym so went and got a massage and hey presto - it was fixed! A day later came tooth pain, which then turned into a swollen wisdom tooth, then into a swollen face, then into a jaw that couldn't even open wide enough to fit in a pre workout banana. It was then, when I had to mush a banana through closed teeth that I knew something was seriously not right!
Doctor says - "it's fine, here's some codeine...".
Dentists then says "the tooth needs to come out ASAP!"
SO it did. I was so nervous, I don't enjoy the dentist (who does really?!), but it was fine. They gave me the laughing gas and I got to watch modern family on the roof tv (pretty fancy) and it was over before I knew it.
It's been hard going eating wise the past few days so I made a treat tonight. I've made these before and love them - "Healthier Reece's peanut butter cups". These came about as an experiment in the kitchen. I find some peanut butter is too salty for this and they're not great to eat. I use no sugar no salt peanut butter, then add in a tiny bit of salt. There are a few versions flying around on the net, I only use a few ingredients but you add in other things if you wish!
PS - Great for a mother's day treat if you're stuck for ideas!

Reece's peanut butter coconut cups
Bottom layer:
4 tbsp smooth peanut butter
2 tbsp coconut oil
1 tsp vanilla essence
1 tsp stevia
Melt these ingredients in a pot and pour into silicone moulds & place into freezer until hard.
I dont have these so I use muffin liners (not really ideal though)
Chocolate layer:
1 row dark chocolate squares (I use Lindt)
4 tbsp smooth peanut butter
2 tbsp coconut oil
1 tsp vanilla essence
1 tsp stevia
Sprinkling of salt
Melt these ingredients in a pot and pour on top of the bottom layer and freeze until hard.
Try not to eat too many at once!
Makes about 7 mini cups.
