After contemplating what to bring for xmas dinner and looking at a million websites with no luck, I got started on report writing. After 2 days of solid work my report writing program crashed on me. This happened to me last term so you think I would have learnt my lesson and copied my work over, but no. One minute I was fist pumping the fact they were done, the next holding my head in my hands ready to cry. After this depressing incident, I decided to give up and experiment in the kitchen! No excuse needed to do that really, but after sitting for a day and a half, I've had enough.
I had some left over pumpkin in the fridge that I didn't know what to do with. It was getting soft and I really couldn't be bothered baking it so I decided to try it in pancakes. YUM! I always see posts about pumpkin pancakes but you need pumpkin puree which we don't have here, so I've never made them. They were really good, but you definitely need to like the taste of something savoury turned into something sweet! I added in some protein powder and had a nice little treat! I topped them with some banana & peanut butter ice cream (frozen bananas blended with peanut butter!) and they were delicious. A definite on my 'must make again soon' list!
Pumpkin pie protein pancakes
1 scoop vanilla protein powder
2 egg whites
1/2 tsp cinnamon (or more)
1/2 tsp nutmeg
Stevia to taste
Microwave pumpkin for 5 minutes and blend.
Mix all ingredients together - my mixture was a bit thick so I added a little almond milk.
Fry in pan like normal pancakes :-D
