So, last Monday night I made a last minute decision to compete in a bikini comp in 12 weeks. I went for my repeat DEXA scan on the Monday and was pretty excited to see good changes because my body has changed and people have noticed. But, when I got the results I nearly cried. Apparently, over 6 months, I have not gained a single kilo of muscle and had purely put on fat. How could that be? Was something wrong with the machine? It wasn't the same place I went to the first time, and yes, the machine was older, but it couldn't be that much out. I honestly couldn't understand. How could I have worked so hard and have my body composition stay exactly the same??!! So I went home and cried. I snuggled with my cat and just had a huge sook. Adam came home and I cried again. Then my trainer called me and gave me some words of encouragement and it was all I needed. The next morning we spoke and decided to give it a good shot over 12 weeks. Yeah I probably need more time but I'm going to try my hardest and see where it gets me! I have nothing to lose and everything to gain. Competing in 12 weeks will give me an excellent picture of where I am and what I need to work on for March. I will know what worked / did not work in terms of dieting and cardio and what needed to be done differently. Plus I will already have the bikini plus shoes, so cuts costs in half (a good rationalisation!!) :-) .

The photos below are what inspired me to change and even though I never considered myself fat, I was unhealthy. In these pics I had still been working out 5 times a week, just not the right way. The fist pic is this time last year in Bali. I weighed around about the same as I do now. This pic depressed me when I saw it because I realised that my legs were bigger than Adam's and that wasn't good.
I then decided to do a 12 week challenge at the gym and really cleaned up my eating habits. I didn't lose weight but my measurements were a lot different and I looked healthier by the end of it.

I then decided to really commit to my training and over the summer holidays, trained hard and actually thought about what I was putting into my mouth instead of shovelling it in!
This is me this morning, nearly the same weight as both pics above. I don't really have a great front on photo so will save that for another day. I have decided to update my blog and include pics on my progress. Still 11 weeks away, so plenty of time!
Eggs, eggs, eggs!
I have always been an egg lover. I could eat them every day. But when I started feeling unwell, eggs seemed to also disagree with me. I haven't eaten eggs in a long time. Then last week on a whim, I decided to make an omelette. It was amazing and my stomach was fine. So then I made another, and another and have consumed nearly 2 cartons of eggs in a week. Cholesterol shmolesterol! I have made sweet omelettes, savoury omelettes, pancakes, you name it. I even own egg whites in a carton! Yesterday I made an omelette recipe from Amy at The Holistic Ingredient, but using egg whites instead of full eggs. Bloody delicious! I made another one today, a Thai inspired omelette, again using egg whites, bok choy and a few spices. I have posted both recipes below. Sweet Chocolate omelette:
1 egg & 3 egg whites
1 heaped teaspoon raw cacao (I actually used Vitarium sugar free drinking chocolate)
½ teaspoon cinnamon
2 or 3 drops vanilla essence
Sweetener to taste, I used Stevia
Pinch of sea salt
Beat eggs with an electric beater to make them nice and fluffy. If not, a fork will do!
Mix in all other ingredients. Fry in pan until done.
I put raspberries & greek yoghurt in mine, Amy does hers with caramelised pears. YUM!!

This is something i threw together this morning because I had soooo much book choy it was unbelievable and I need to use it up.
3 egg whites & 1 whole egg
1 tbsp coconut milk
Handful of chopped coriander
Handful of chopper spring onions
1 tsp sweet chilli sauce (i also used chilli flakes because I love chilli!)
2 baby bok choy.
Steam the bok choy for about 5 minutes prior (you can throw it in raw if you like)
Mix eggs, herbs and chilli together and beat with a fork.
Cook in a pan, before flipping, add in bok choy and let cook under grill for a little while longer.
Probably not my best creation and I will be playing around with the spices a bit, but was still pretty yummy!
