ANB Workshop.
Week 2 of comp prep down already and it was a good week. On holidays relaxing, watching Game of Thrones (PS am in love with John Snow!) and hanging out with my cat! Have had some time to actually think about my food preparation and gym routine once I get back to work. I went to an ANB workshop yesterday where I met the editor of Oxygen magazine and bodybuilding champion Lindy Olsen. I have been a fan of Lindy's for a while and have always loved the fact that all the pictures in Oxygen are natural and not airbrushed and she actively promotes this in the mag. What I didnt know about Lindy was that she was once a fat girl who struggled with her weight. Her story was inspiring and has made me so much more confident going into this competition. This is Lindy's latest Oxygen cover which I read front to back.

We got to practice our walking and posing - mine was a bit off to be honest, but will keep trying!! Feeling much more relaxed about it all now that I have learnt a bit more about how the whole comp works, the different divisions etc. I'm still torn as to what division to enter - bikini or fitness. Most of the girls I met yesterday were going for fitness, but not sure if I will be ready for that. I will be in the best shape of my life getting up on that stage in a bikini, but still, I don't know! Anyway, on the food front, all good. Jumped on the scales this morning and have dropped about 500 grams, which puts me at 64.5 ish. Not sure how much of it is water weight, so will check in with my dietician this week to find out. I am definitely feeling leaner, especially around the mid section. My trainer told me that my face was skinnier - out of all places to be skinner! I know that I will be keeping calories at about 2000 for the next 2 weeks and then dropping them at 8 weeks out. I am still eating pretty much what I like, but keeping the fat content in check, which is tricky because I love almonds and peanut butter. I had a sneaky chocolate last night which I did not count - my treat after 2 weeks of not touching a morsel of fatty foods!
3 ingredient protein pancakes!
Made these awesome protein filled pancakes this morning (and no protein powder in sight!). and scoffed them after a huge leg session and am feeling great about it!
3 ingredients. So easy. Make them now!
1/2 cup cottage cheese
1/2 cup liquid egg whites
1/2 cup quinoa flakes
Optional:
Stevia or cinnamon to sweeten. You could chuck in fruit etc too.
Blend all ingredients with a stick mixer in a bowl. You could just mix with a fork but they wont be as fluffy.
Cook in some non stick spray.
Top with desired toppings. I used Vitarium suger free chocolate drink heated with a bit of water and some raspberries. Delicious!
