I can't believe it's only 4 weeks to go (on Sunday) until my comp. I'm starting to get nervous.... I've been pounding around in my shoes, but still need to make sure my posing is correct. It is so much better than is used to be, but still, practise makes perfect! Weighed in on Monday and was 1.1 kgs down from last week which was a bit of a shock actually. I didn't expect that! Hopefully the next 4 weeks go well and we don't have to drop calories or add in much cardio because that would be ideal! First food craving last night - ice cream and burgers. Together. Like ice cream in a burger. Found this on google - basically what I was wanting!! I don't really get food cravings, especially this year since I have been eating what I want, when I want but just fitting it into my macros, so was a bit tricky. Don't have either of these foods in the house, so sooked it up in bed for a while and went to sleep. Am over it now though!
I have been playing around with my fave recipes lately to make them fit into my contest diet. I seriously do not want chicken and veggies for dinner and refuse to eat boring food. I also cook for 2, and if I made meat & veg every night for dinner, I think Adam may possibly move out!! I love Thai so have come up with this yummy laksa. It is chock full of veggies and delicious chicken breast. I used evaporated milk in place of coconut milk for the low fat content (I am not concerned about sugar content), but you could use either and it would still work.
I also cook mine with slim noodles - a lifesaver at the moment as they are low in calories and carbs, but are filling due to the high fibre content. I make Adam's with normal rice noodles. Enjoy!

Chicken Laksa
Serves 3, BUT Adam eats quite a bit, so for us, this serves 2 & 1/4!
300g chicken breast sliced thinly
1 red capsicum sliced thinly
1/2 eggplant cubed
1 tin baby corn, drained and chopped
Green beans - a big handful (around 150g)
2 tablespoons grated ginger
1 red chilli
3 heaped tablespoons laksa paste (I use Valcom)
1 can coconut flavoured light & creamy evaporated milk (you could use coconut milk)
2 - 3 cups chicken stock (I use Massals salt reduced).
Handful chopped coriander
1 pack slim pasta noodles OR rice noodles.
Chop up beans and put on to the boil for about 10 minutes or to your liking.
In large saucepan, fry off chicken breast in a bit of water until half way cooked.
Add in the capsicum, eggplant, baby corn, chilli and ginger and cook for a few minutes. Add in some extra water if it starts to stick. You can use oil, but my aim is low fat at the moment.
Add in the beans, laksa paste, coconut milk and stock. I cook here for another 5 minutes on low, but don't let it boil over.
Once it is cooked, I let it sit for 5mins to soften up all the veggies.
While it is sitting, either chuck some rice noodles in a bowl with boiling water OR serve it on top of half a pack of slim noodles :-)
