I have been absent lately, not by choice, but because I have been knocked down by sickness! I haven't been really sick for a long time so this has taken its toll. I got conjunctivitis off one of the kids, which turned into a full sinus infection, which then turned into the flu, which has now turned into completely blocked up ears - I feel like I am under water! I took a week off work and have only been to the gym once in the past 2 weeks which sucks, but went back yesterday and was loving life. Am not loving the glute soreness now though!
I mentioned last time that I had stopped tracking macros and counting calories and had begun eating what I wanted. It has been great and I will continue like this for a little bit longer. I am trying to stabalise my weight at the moment, I have put on 2.5ish kilos since the comp, which is nothing on my 5 ft 10 frame, and am wanting to slowly increase my food intake so that I can rebuild my metabolism without chucking on weight too quickly. Speaking of weight - the idea of putting on weight is hard. I put on my skinny jeans last night and they felt tight, which I knew they would be, but mentally it's a blow. I knew that a stage weight was not maintainable, and even though I am still 6 kilos lighter that I was 5 months ago, I feel heavier. I was talking with my friend Liz over an amazing bento box and we both agreed that life is too short to be lean all the time. Seriously. It took a lot of work to get that lean, and while I loved it, I don't want to be missing out on all the fun experiences my tastebuds could be having. Food is a big part of my life, I love cooking and eating and I don't think I would give it up for an amazing body all year round. So, I am trying out the concept of "moderation". Pretty tricky, I like my cake and I want to eat it too (the whole thing). I am trying to save up my big cheat meals for the weekends instead of eating out during the week. Adam and I love eating out so this is tricky, but we're trying!
In the meantime, back in the kitchen to whip up something fun in between writing my reports and watching the Melbourne Cup!!
Pina Colada overnight oats
I have been back in the kitchen, making and baking and have been LOVING overnight oats. I have been able to tolerate oats so I have been going nuts on them! This recipe is one of my faves, tastes like lemon cheesecake. The base of my overnight oats is always the same, I just switch up the other ingredients. The variations on this are endless, this is just one.
Base:
1/3 cup oats
1/3 cup plain greek yoghurt
1/3 cup milk (whatever you like, I used coco quench - kind of like a coconut milk / water)
1 tbs chia seeds
1/4 banana mashed or cut up
1 pack sweetner
1/2 tsp coconut essence
1/2 tsp lime juice & lime zest
1/2 tsp lemon juice & lemon zest
Mix all in a mug, throw it in the fridge, slam the door shut and wait eagerly for your pina colada breakfast! It was so delicious - Adam has claimed this the best overnight oats I have made, which is a good sign! I also throw in 1/2 scoop of vanilla protein powder and some extra milk, but not necessary if you don't want to.
