It’s holidays!! Have I been counting down the days? Definitely. Will they go way too quickly?! 100%! But I can’t complain, having these holidays is amazing. Time to recharge and get ready for the long term to come.
I was pretty good over Easter, my main eating indulgence was Easter Sunday (as it was for most of us) and even then, I loaded my plate up with meat and veggies, so did pretty well. I couldn’t eat the desserts as they were mainly flour based, so dessert consisted of me picking out the fillings of pies. But then came the chocolate, and boy did I eat a lot of it, and in many forms - melted chocolate, chocolate eggs and bunnies. That’s what killed me.
It was good in a way, I felt so horrible afterwards that it just reiterated the fact that I shouldn’t be eating this way. I love chocolate, and I love an indulgence, but I hate the sluggish feeling afterwards and the fact that I was carrying around a baby belly! It helped me set some new goals for April, one being to cut down on foods with added sugar. I am not jumping on the whole “I Quit Sugar” bandwagon, because I honestly feel like that is setting myself up for failure. I don’t want to have a piece of chocolate and feel like I failed as I couldn’t “Quit” completely. I still want to enjoy my treats, but be a little more mindful of the amount of sugar I am eating.
SO, my treats for now are my breakfasts. They always are a kind of treat as it’s my favourite meal and there is so much you can do with it! Here is an amazing breakfast bake for the coming winter. Warming and so delicious, you will want more. Maybe make 2, just in case!

Recipe
1/3 cup quinoa flakes
1/3 cup almond milk
½ banana mashed or chopped, or a mixture!
Handful of raspberries or blueberries
½ tsp vanilla
Cinnamon to your liking
Topping:
10 crushed almonds
Pinch of shredded coconut
Goji berries & cranberries to top.
Heat oven to 170 degrees.
Mash banana in a bowl and then mix in the rest of the ingredients. Pour into a ramekin.
Top with crushed almonds or nuts of choice and some coconut.
Bake for around 12 – 15 mins until brown
Top with a little more coconut and some dried fruits of choice (I used goji & a few unswee.
I also topped mine with some yoghurt. Such a good balance between hot and cold. YUM!
